Rush Creek Reserve
Right now, the remaining Rush Creek wheels we have are very ripe. The rind is pungent and strong, but the custard inside is delicious. We’ve heavily discounted these to find a home for the last few wheels we have for the year. If you purchase, I would recommend not keeping it around for a long time…..it will keep getting stronger and stronger until eventually not desirable. If you’ve never had Rush Creek, it’s wrapped in spruce bark. You cut the top off, and underneath, the cheese is of a custard texture. You can warm it in the oven until gooey, and spoon it out….it is amazing.
